Sundays this summer at Bywater American Bistro (BABs) have been filled with guest stints from a variety of mixologists who have joined Head Bartender Crystal Pavlas to whip up creative cocktails behind the BABs bar. The summertime Guest Bartender series will culminate with two very special cocktail collaborations. On Sunday, September 16, Pavlas will team up with Maggie Morgan, bartender at Manolito – the Cuban bar and café helmed by cocktail gurus Chris Hannah and Nick Detrich. Morgan will showcase two classics utilizing the visually entertaining Spanish technique of “throwing” – a method used to dilute and aerate a drink to add a velvety dimension otherwise unattainable. The refreshing Kalimotxo is an iconic Basque drink featuring Camino de Navaherreros garnacha and Mexican coke, made in a porrón then poured over ice. Cuba’s answer to a martini, El Presidente features Banks 5 Rum, Pierre Ferrand dry curacao, Dolin Blanc and grenadine; thrown and served in a coupe with orange peel. Morgan will also feature A Few Small Sips, an original cocktail created by her and teammate Anna Giordano which won the Espolon Tequila competition in Houston. This creative concoction features Espolon Reposado, Cappelletti aperitivo, lime, strawberry-jalapeno syrup, egg white and cacao nib. The Guest Bartender Grand Finale will take place on Sunday, September 30, with savvy cocktail maven Abigail Gullo who heads up the bar at Compère Lapin, BABs older sibling. Gullo, ambassador for St. Lucian Rum, and Pavlas invite guests to join them for a Caribbean Calypso pop-up featuring Caribbean Rums from St. Lucia and Martinique with a New Orleans classic twist. Kiss the Girl is an island take on the French 75 with Clement VSOP Aged Rhum Agricole, Creole shrubb, lime and bubbles. Other cocktails include the smoky spiced Dinglehopper Daiquiri features Bounty Dark rum, cinnamon, grapefruit, lime and mezcal; Scuttle’s Sazerac with Rhum JM VO, rye, absinthe, and Peychauds Bitters; and Daughters of Triton with Bounty Gold, Rhum JM, Clement Mahina Coconut, passionfruit, lime, Creole shrubb and rose water. Bywater American Bistro is located in the Rice Mill Lofts at 2900 Chartres Street in New Orleans’ Bywater district. The restaurant serves dinner, Wednesday – Sunday with seating from 5PM – 10PM and brunch, Saturdays and Sundays with seating from 10:30AM – 2PM.
