Auction House Market and Politan Group are proud to announce Cara Peterson, Saba Restaurant Chef de Cuisine, as the featured chef for Market Supper Club’s latest installment. From Chef Cara: "Even though I had grown up traveling and living all over the world, I hadn't been exposed to much Middle Eastern food until I took a trip to Greece following high school. It was there where I begin to understand the simplicity and freshness of showcasing local produce and seafood with minimal ingredients and where I fell in love with all things phyllo-wrapped. This menu is an opportunity to revisit the dishes that have influenced the work and cuisine I've specialized in for years." Sophie Burton, Politan Group Beverage Director, will offer a menu of specialty cocktails and wine expertly designed to pair with each course of Chef Cara’s dinner. Tickets for the full meal, complete with paired cocktails and wine, are $100. Tickets for the meal only, exclusive of beverage pairings, are $85. Cara Peterson, Saba Restaurant Chef de Cuisine, found her way to Pomegranate Hospitality through her interest in simple but nuanced flavors. She grew up in a military family and lived in multiple cities in the United States and abroad. Her varied background provided a broad exposure to regional cuisines and uncommon ingredients. With a degree from Virginia Tech, specializing in technical writing and horticulture, she’s propelled into a creative and holistic approach to food. While initially beginning in baking and pastry in Virginia, Peterson alternated between sweet and savory throughout her career, finding unique textures and techniques in each discipline. Working in Northern Virginia exposed her to globally curated flavors under the guise of a wine bar. But it was in Philadelphia where she served as a Pastry Chef at Zahav Restaurant from 2014 to 2015, where her interest in Israeli and Middle Eastern cuisine developed. Following a move to New Orleans, she furthered her skills at Shaya Restaurant starting as a line cook and working her way up to executive sous chef. In 2017, she began working with Pomegranate Hospitality to open up Saba, where she is now the Chef de Cuisine. Sophie Burton is Beverage Director for all Politan Group bars and 17-year service industry veteran. Having worked her way through a variety of service roles, Sophie established herself as an accomplished craft cocktail bartender for places such as The Mayhaw, Cafe Henri, Saffron, and Bar Tonique. Born in Philadelphia and raised in Albuquerque, Sophie worked in Chicago at Big Star, Dove's, and Cindy's before settling in New Orleans. While not obsessing over balancing cocktails or fostering growth, Sophie spends her time rabidly following the NBA (go Sixers) and pretending that she is not thinking about Thin Lizzy.
