Passport Series: The Art of the Dumpling

NOCHI

Nearly every culture the world over has a "pocket food," and dumplings might just be the greatest of all: a choose-your-own-adventure pocket food where the filling, shape, and cooking method are infinitely adaptable and always full of flavor. In this hands-on class, local dumpling expert Hao Gong of LUVI Restaurant will show you the ropes from start to finish: we'll master three fillings (pork, shrimp, and vegetable), three shapes, and three cooking methods. You'll become a pro of the fine and delicate art of stuffing and shaping perfectly crimped dumplings to enjoy year-round. About the Instructor Chef Hao Gong's earliest experiences in the kitchen were in his native Shanghai, where he lived until the age of 15. His skills continued to develop in numerous restaurants in California and New Orleans, and he describes himself as a hybrid chef, delving into both Chinese and Japanese cooking at his restaurant, LUVI. Hao believes that you first taste food with your eyes, and then your mouth. Cooking has always been a playful experience for him, and his goal is that the dining experience feel just as playful.
